Pioneer Valley Fancy Harvest Peach Cobbler Jam

This is a crowd favorite at farmers' markets and craft shows. This is made from special grown extra ripe peaches to achieve the richest, fullest peach flavor possible. This is something special that I am confident you will enjoy. How do we get such a wonderful flavor? We start with the best ingredients. Our peaches are grown specifically for us by world class growers. We use only a couple a specific varieties of peaches that are grown in micro climates high in the rocky mountains. The combinations of high altitude, west facing mountain slopes, cool nights, and long warm days combine to produce peaches that are bursting with flavor. Then we pay the farmers to leave the fruit on the trees until they are literally "fall off the tree" ripe. They are so ripe that they must be processed the SAME DAY! In contrast, when you buy a peach in the store it has sat for 3-7 days in a cooler at the farm before being trucked to a distributor where it sat in another cooler for several more days at which time it was then sent to a store where it has sat on a shelf for another several days at which point it still must have at least 1 week of shelf life when you buy it.
