Known in Europe since the 17th century, Angelica is the fleshy root of the wild celery plant. It stimulates production of digestive juices, can help improve the flow of bile into the digestive tract, and combats digestive muscular contractions. - Don't confuse the European variety of this root with Chinese Angelica, or Dong Quai. The Chinese version can be used as a supportive for menstrual problems and to help support menopausal women, tonic for fatigue (loss of red blood cells), and a product for heart health issues and blood circulation. - European Angelica, on the other hand, was originally thought to be a supporter of symptoms for headaches. Later, it can be used to help support the common cold. Today, only its digestive uses are considered valid. - Hot tea brewing method: Bring freshly drawn cold water to a rolling boil. Place 1 teaspoon for each cup into the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea). - Iced tea brewing method (to make 1 liter/quart): Place 6 teaspoons into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste.
