Most Earl Greys use poor quality China base tea, which is like palming yourself off as landed gentry when all you own is a Barbour jacket. We use the finest Darjeeling from the foothills of the Himalayas and add zesty bergamot citrus from sunny southern Italy, to create something altogether more elegant. The blue cornflowers? Well, they just look so pretty. Our tea temples: We use whole leaf only, not the dust found in regular tea bags; whole leaf is best. A tea worthy of worship belongs in a biodegradable "tea temple" - our spacious, silky, transparent purse allowing maximum room for perfect infusion. - Prepare and Use: One tea temple per person, infused in boiling water for at least 3 minutes.
