This alternative to true spinach is called a 'summer spinach', as it thrives in hot, dry weather and is drought tolerant. After true spinach varieties have finished, you can grow New Zealand spinach and have a great stock of spinach during all summer. Sow New Zealand spinach seeds in the garden after the last spring frost or 3-4 weeks before last frost in a container with drainage holes for later transplanting, as the plant is not frost hardy like a common spinach.Soak in water for a day prior to sowing to speed up the slow germination. Plant in full sun in moisture-retentive, well-drained soil rich in organic matter. Sow seeds ½ inch deep and 4-6 inches apart. When seedlings are 3 inches tall, thin to the strongest seedlings, from 12 to 18 inches apart. Preferably set plants in hillsto allow the weak stem to sprawl. Space hills or rows 24 to 36 inches apart. Keep the soil evenly moist; water regularly for rapid, full growth. Do not let the soil dry out.Spinach will be ready for harvest 55 to 65 days after sowing. Harvest by pinching off the leaf tips. It willencourage new growth and a longer harvest.
