A mulato chili is a fully mature poblano pepper. When harvested early it is called a ancho chili. Our Mulato Chili Extract, Natural was originally developed for use in alcoholic beverages, but can be used in any application requiring a water soluble flavor including baked goods, soups and sauces. It has a earthy, chocolate-like flavor with subtle licorice and cherry notes and a Scoville level of 2,500 to 3,000 SHU. We recommend a starting use level of 0.50% by weight and adjust to desired impact is achieved. At typical application levels this extract will impart mild heat.
