The French Thyme plant, sometimes referred to as 'Summer Thyme', has narrow grayish green leaves and is distinctly sweeter than English Thyme. With its intensely aromatic leaves and pale lavender-white flowers it is a good choice for containers or in herb gardens due to its compact shape and size. One of the three major varieties of Thyme, it is essential in French cooking - no stew, soup or ragout is complete without this key culinary ingredient. And like the other varieties of Thyme, it compliments meats, seafood, veggies and sauces well. French Thyme is also a basic herb in the savory seasoning satchel Bouquet Garni, because it retains its flavor and scent during the cooking process. It can be used fresh or dried in salads, stews, sauces, and pickles, stuffing, poultry, fish, meat dishes, pizza sauces and marinades. The cut foliage is a fragrant addition to cut flower arrangements and it great dried for potpourris too. Place plants 12-18 inches apart in a full sun to partial sun location. Thyme needs a normal to sandy well-draining soil with regular watering. This hearty disease resistant thyme will grow 12-15 inches tall and is drought tolerant. Frequent harvesting will encourage leaf growth throughout the warm season. Cover with leaves and grass clippings in the fall to protect the plant during the winter months
