Wine Barrel Aged Coffee Whole bean

We take freshly dumped oak barrels, usually acquired from a winery that has recently finished using it in their production process, and pour green, unroasted coffee into it. We seal the barrel, and over the course of the next several weeks, we rotate the barrel every other day to ensure even aging and maximize contact between the beans and the bourbon soaked oak. During this time, the bean soaks up the bourbon and develops its aroma and juices. When the aging process is over, we store the greens, and when ready for roasting, we freshly roast to to preserve the flavors and aromas within the bean.
