Made at the end of the season, this rich syrup has strong maple favor and is reminiscent of melted brown sugar, tinged with vanilla and rum. Excellent with morning waffles but also quite nice in a Bourbon Old Fashioned or used as a sweetener for coffee, lemonade, or iced tea.
