Which combination should I get?  Both the 400/1000 grits and the 1000/6000 grits can make your knife very sharp and they are both perfect for general use at home.The difference is that 400/1000 can also fix damaged knives and 1000/6000 make your knife extremly sharp. So If it is for general home use, both stones's result will meet up your needs. But if you are a professional knife user, for example a chef, hunter or knife makers, you will the need the 6000 grits to keep your knife razor sharp. Selecting the correct whetstone 120-400 grit For repairing damaged knives/edges. 600-2000 grit Used to sharpen dull but not damaged knives. 3000-8000 grit These are finishing stones and are used to achieve razor-sharp results. Instructions 1. Fully immerse the whetstone in water and soak until bubbles no longer appear (approx. 5-10 minutes). 2. Place the waterstone together with the rubber base on a steady surface. 3. Use lower grit side of the knife sharpener for rough grinding. Move the blade back and forth at an angle of 10-30 degrees, applying gentle pressure. Starting at the tip of the blade, continue through the middle section to finish at the base. Continue to apply water while sharpening. Repeat previous step on opposite side of blade. 4. Turn over whetstone. Repeat sharpening process on higher grit side for fine grinding. 5. Clean sharpening stone set and place in well-ventilated area to dry.
