A large, smooth, globe-shaped root, the American Purple Top Rutabaga is wonderful when served with roast pork or beef. Its yellow flesh is sweet and fine-grained, turning bright orange when it is cooked. This deep purple topped root has a diameter of 4-6 inches and were the primary root crop in Europe before the 1600s. This variant was introduced to America in 1820. It is a cool weather crop that does best in well-drained, well-worked soil rich in organic matter. Adding aged compost to your planting beds will increase the growth of this delicious root vegetable. Soil lumps and rocks need to be removed as they can cause split or malformed roots. This is an excellent storage variation and can last up to 6 months when properly stored. This seed should be planted in either the spring or fall. Seeds should be sown 1 week prior to the last spring frost or in the beginning of autumn for a fall harvest. The roots will be ready between 60-90 days. They should be planted in furrows and then be thinned to a spacing of 4-6 inches between plants. Regular watering will insure the roots grow properly.
