Recipe - Latkes

Makes about 12 bite-sized portions

  • 1-lb Yukon gold potatoes
  • ½ medium onion, peeled
  • 1 egg, lightly beaten
  • ¼ cup all purpose flour
  • ½ tsp. baking powder
  • vegetable oil for frying

    Options:

  • 1 Tbs. plus 1 tsp. Spicy Italian Roasted Garlic (7606)
  • 1 tsp. Original Turmeric Seasoning Salt (7082)
  • 1 Tbs. plus 2 tsp. Vadouvan Curry (7092)
  • 1 Tbs. plus 1 tsp. Spicy Italian Sun Dried Tomato (7607)

    1.)Peel potatoes and onion and shred in a food processor or by hand. Drain mixture in a colander for 20 minutes. Wrap mixture in cheesecloth and wring to remove as much moisture as possible. If you do not have cheesecloth, you can use a clean kitchen towel or use paper towels. I have found that using a potato ricer also works well.

    2.)Place potato mixture in medium bowl and stir in egg. Whisk together flour and baking powder in small bowl, add to potato mixture, and stir just to combine. Choose your seasoning from the options above, and fold into latke mixture.

    3.)Heat 3 Tbs. oil in medium skillet over medium heat and drop 4 heaping 1 Tbs. mounds onto skillet. Lightly flatten latkes and cook about 2 minutes or until golden brown. Flip latkes, and cook 1-2 minutes more, or until cooked through. Remove latkes from pan and drain on paper towels before serving. Repeat with remaining mixture.
