The first pistachio trees came to the island of Aegina in the late 19th century and many more were planted between 1920 and 1940, once their ability to adapt to the soil and be productive became apparent. The pistachio, called fistiki Aeginis in Greek, was a major factor in bolstering the local economy and even now its contribution to the income of Aegina households is sizeable, whether through cultivation, packaging or trading. Most important has been its role in maintaining the island's character by preventing the wholesale construction of land that would have turned the island into another suburd of Athens. This is a net-500g roasted and salted bag packaged by the island's Grower's Cooperative. Serve alone or with your drink. Impossible to be compared with other varieties, they are unique. Give them a try!
