The casing for this salame is produced from beef collagen, meaning that since the meat is all 100% wagyu, it is ideal for the consumer who is looking for a tasty alternative to pork. It is seasoned with black pepper, thyme, and cabernet wine. It evokes flavors of honey and olives on the finish.
