Sweet or mild paprika is the most popular spice in Spain for seasoning paella or other Spanish rice dishes. The paprika in Spain is called pimenton and there are different regions like pimenton de la Vera or pimenton de Alicante where this one comes from. This smoked mild pimenton spice is used in quick cooking dishes like omelettes, mash potatoes, meats, tomato pasta... Its particular red color adds personality to white soft cheeses, soups, or different sauces made with mayonnaise or cream. Pimenton is also traditionally used to preserve cured sausages like chorizo or lomo.
