Shrimp & Vegetable Tempura Ingredients: Large Shrimps: Peel and devein, leaving tails on. Eggplant: Cut into 1/4 inch thick round slices. Zucchini: Cut into 1/4 inch thick round slices. Carrots: Peel and cut diagonally into 1/4 inch thick slices. Sweet Potatoes: Peel and cut into 1/4 inch thick round slices. Broccoli: Cut into bite-size florets. Onion: Cut into thick rings. Dry ingredients with paper towel. You may add or remove ingredients as you see fit. Preparation: 1. Preheat vegetable oil to 360 degrees F - 375 degrees F on medium heat In a deep, wide frying pan. 2. Pour 3 cup of ice cold water into a mixing bowl. Add 1 cup of Shirakiku Tempura Batter Mix and stir. Do not beat. Batter should he thin and lumpy. Frying Directions: Sprinkle the ingredients with dry batter mix. 2. Dip shrimp in batter. Allow excess to drain slightly. 3. Slide it gently into hot oil. 4. Fry a few at a time. Avoid overcrowding. 5. Fry for 3-4 minutes or until golden brown. 6. Place the fried shrimp on wire rack or paper towel to drain. 7. Repeat with other ingredients. Note: Occasionally skim oil with a wire strainer to remove pieces of cooked batter.
