In the territories of Sabina, between Rome and Rieti in Italy, Sabina D.O.P. olive oil is produced. This is an ancient olive oil obtained from a variety of olives, that include: Carboncella, Leccino, Raja, Frantoio, Olivastrone, Moraiolo, Olivago, Salviana and Rosciola olives.
Olive picking and olive oil extraction takes place between the 1st of October and the 31st of January of each crop year. The olive oil Sabina achieved the "Protected Designation of Origin" (D.O.P.) status in 1996.
