Ravioli Maker - Small Dumpling Press – with Polish Pierogi Cookbook - Makes 55 Dumplings

This mold makes preparation of dumplings fast and easy. You can make 55 dumplings at a time. These are traditional Christmas bite-size pierogi called uszka measuring 1 1/8 inches across with 15/16 inch filled pockets. Used in Poland to make "little ears" ( uszka) for borscht, it is almost necessary in Polish kitchens all year round and most especially during Christmas. How to use the uszka mold - 1) Sprinkle generous amount of flour on the mold so the dough doesn’t stick. 2) Lay the dough over the tool. 3) Add filling to the naturally forming pockets. 4) Put another layer of dough over the top. 5) Seal and separate the pierogi by running a rolling pin over the top. 6) Pop the pierogi out of the pockets. 7) Put them in a pot of boiling water, cook and serve.
