Hyssop (Hyssopus officinalis) - Hyssop is a hardy perennial herb that grows no more than 2 feet tall. It has woody stems, small pointed leaves, and spikes of small purple flowers. There also are forms of hyssop with either rose or white flowers, but this one is the most common. If kept clipped, it makes a good border or small hedge. The hyssop herb is an aromatic, bushy plant with small leaves and tiny flowers along the stems. Young leaves have a bitter, minty flavor, and are used for medicinal and culinary purposes. Hyssop's pungent leaves are used to flavor liqueurs and sometimes are used as a condiment. The mint-like leaves and flowers add flavor to green salads, soups, fruit salads, and teas. Hyssop can be grown in containers. Plant hyssop herb seeds in a sunny spot where the soil drains well or is dry. In early spring, sow these herb seeds 1/4 inch deep in rows about 1 foot apart. In early summer, thin the hyssop seedlings to about 1 foot apart within the rows. Prune the hyssop herb plants occasionally and remove flower heads. Hyssop requires very little maintenance. The best time to harvest hyssop is just before the flowers begin to open. Hang in bunches upside down in a shady, warm, airy location. Remove the leaves and flowers from the stems and then place in airtight containers. Harvest only the green plant matter since the tough woody parts have little flavor and scent.
