Safflower (Carthamus tinctorius Orange) - Start Safflower seeds indoors in late winter using peat pots that can be planted directly out once frost danger has passed. Or, start the seeds directly outdoors in early spring before the end of frost season. Prepare a seed bed and cover the flower seeds lightly with 1/4 inch of soil. Safflower plants like full sun and hot conditions as they are native to the Mediterranean. The thistle-like foliage is mildly prickly, and the colorful blooms will provide long lasting color. Safflower herbs can be used as dyes and as a saffron substitute in rice dishes. Commercially, it is important as a source of good quality cooking oil. Safflower Carthamus flowers are excellent for cutting and drying. The dried blooms are considered to be everlasting.
