 Sorrel Green City  A perennial, it is available in early spring, before many annual crops have even been sown! The lemony tartness of the young succulent leaves gives a tangy twist to salads. Plant height is 12.0 to 18.0". Widely used in soups; combine with spinach for an authentic spanikopita. This cultivated variety with clear green leaves is much slower bolting than the wild species. Planting instructions:  Sow seeds for the sorrel plants in spring when the soil has warmed up. To ensure high germination, it is necessary to prepare seeds. For several days, the seed material is wrapped in a cloth and watered with water. The seeds will receive the necessary moisture, which will help the plants ascend in the shortest possible time. It is also possible to dilute nutrient fertilizers in water, so that the sorrel will increase immunity. This will allow you to get 100% germination. Prepare a well drained bed with well tilled soil. Seeds should be 6 inches apart and just under the surface of the soil. Keep the bed moderately moist until germination and then thin the plants when they reach 2 inches high. Sorrel will not need a lot of supplemental care, but the bed does need to be kept weeded and the plants should receive at least 1 inch of water per week. The smallest leaves are best in salads and add an acidic tang. The larger leaves are more mellow. The herb is a traditional accompaniment to eggs and melts into creamy soups and sauces.
