Matcha is Ground from shade-cultivated tea leaves, and rich in theanine, an amino acid responsible for matcha's full-bodied mellow sweetness, which is called umami in Japan. Generally, the higher the grade, the richer the umami taste.

For those who prefer a lighter, more refreshing taste with a noticeable astringency, Enishi-no-shiro is an excellent choice. Best prepared as the thinner usucha.

This matcha was named by Jimyosai-sosho XIV, the great grand master of the Omote-Senke family of tea masters.

How to prepare matcha (Usucha)
(1)Sift 1.5 heaping tea ladles or 1 level teaspoon (2g = 0.07 oz) of matcha
(2)Pour 60 ml (=2 oz) of hot water (80? = 176?) into tea bowl
(3)Whisk vigorously 15 seconds, making "M" shape

Shake your matcha in a travel flask
(1) Sift matcha powder [use 1 g (1/2 tsp) per 100 ml (3.4 oz) water]
(2) Add chilled water into a travel flask
(3) Close the lid and shake
