DECAFFEINATED (SWISS WATER) Swiss Water Process (Swiss Water Process) is a method of organically separating caffeine from coffee beans. Unlike other methods, this method is carried out without using any chemicals, only with water and carbon filters. The goal is simply to separate the caffeine from the coffee beans, without destroying the delicious ingredients and aroma. For this, a batch of green coffee beans are first soaked in hot water and the components, including caffeine, are released into the water. This first batch of seeds is taken out and discarded, because besides caffeine, other flavoring ingredients have also gotten into the water and lost. This remaining water contains all water-soluble components, including caffeine in coffee beans. These substances in water are called GCE (green coffee extract), or green coffee extract. After this process, this water, which contains other ingredients besides caffeine, is passed through a carbon filter. Carbon filters absorb only the caffeine in the GCE, but other substances remain in the water. Then the water that has been decaffeinated in this way is recycled with a new batch of green coffee beans to be decaffeinated. This time, because only the caffeine is missing in the water, the caffeine in the coffee beans passes into the water, while the other flavoring ingredients remain in the coffee beans. With this method, without using any other solvents, coffee beans that are purified organically from caffeine by means of only water and carbon filters and preserving all their aroma are obtained.
