Butter 1 C Granulated Sugar 2 Eggs 2 C All-Purpose Flour C Cream 2 C Jansal Valley Dried Cherries 3 t Vanilla Extract 14 oz. Chocolate / shaved Turbinado Sugar / to taste 2 C Walnuts / chopped / toasted In a medium sauce pan, heat olive oil over medium heat. Add shallots and saut?ntil translucent. Add garlic, ginger, pepper flakes and salt, saut?nother 2 minutes. Add sugar and saut?nother 3 minutes. Remove from the heat, stir in the vinegar and water. Return to the stovetop, and add in the remaining ingredients. Cover with parchment paper* or lid and simmer on very low heat for 40 minutes, or until apples are cooked through and are tender. At this point, remove the lid and simmer until the mixture is thick and almost all of the extra liquid has evaporated. Cool on the countertop, transfer to glass jars, seal, and store in the refrigerator up to two weeks. METHOD: Preheat oven to 350F. In a stand mixer, cream butter and sugar. Add eggs and blend. Add flour and cream, mix well. At a low speed, fold in vanilla, cherries, and chocolate. Create tablespoon-sized balls of dough, should make about 36. Sprinkle each with sugar to taste, then roll in walnuts to coat evenly. Space out cookies evenly on a lined baking sheet and bake for approx. 8 minutes, or until done. Enjoy! Tip for creating a decadent display: To showcase a variety of different looks using one basic recipe we made just a few tweaks to create several different cookies. In one method, we rolled the dough into an even log, rolled it in chopped walnuts and sliced into rounds. Be sure to refrigerate before slicing with this method! Another simple method we love is to incorporate the walnuts right into the dough and roll the balls just in the flavored sugar, giving the cookies an even balance of cherries and nuts.
