Gumbo File (fee-lay) is a traditional Creole seasoning made from the dry, powdered leaves of the sassafras tree. It is used as a thickening agent in place of, or in conjunction with, okra. "Gumbo" is an African word for a stew favored in both African and Creole cooking. Gumbo File has a flavor reminiscent of root beer, and smells faintly of eucalyptus. It may be added to the stew just before serving or served as a condiment at the table, so that each person can add it to his dish according to his own taste.
