This is the fine corn flour left over (sifted from) from making bolted grits. It is stone ground from an heirloom open pollinated non-GMO yellow dent corn variety named Henry Moore grown on our small family farm. It was raised on our farm using organic methods on ground in a three year transition to certified organic. It's a relatively fine yellow corn flour that can be used in baking cookies, cake, etc. (though not a direct replacement for wheat flour) Allergy notice: We use the same machinery to grow and process corn, wheat, soybeans, oats, sunflower, buckwheat and peas.
