Olive (Olea europaea) is a tree (10-12 m in height), drought-resistant, able to withstand short-term frosts. The trunk is covered with dull, twisted, gray bark. The branches are knotty, long, and drooping in some varieties. The leaves are simple, opposite, gray-green, silver below; do not fall for the winter, renew within two to three years. The flowers are very small, whitish, bisexual, collected in racemose, paniculate inflorescences. The fruit is a drupe with a fleshy pericarp, of an elongated oval shape, with a pointed or blunt nose and a pronounced waxy coating. The color of the fruit pulp varies depending on the type of tree (green, black, or dark purple). The seed is very dense, with a furrowed surface. It blooms from late April to early July.
