Halkidiki Olives share the birthplace with the famous ancient philosopher, Aristotle. They are cultivated on the triple-pronged Halkidiki Peninsular, ashore the Aegean Sea, and adjacent to the sacred Mount Athos. The name of the region, Halkidiki - aka Chalkidiki or Khalkidiki - is fun to pronounce: Hal-Kee-Dee-Kee. Unique climate conditions and soil characteristics, coupled with the breeze of the Aegean Sea, make these olives develop a full, spicy, and slightly bitter taste with a hint of fruity aroma. As opposed to most of the other green olive varieties, Halkidikis do not have any flavor of oiliness at all and are refreshingly light in taste. This is the reason the Halkidiki Olives are considered superior, among other table olives. We harvest the superior Halkidiki Olives early in September, while the fruit is young and rich in polyphenols - natural antioxidants. We handpick the olive to secure wholesomeness of the fruit, then cure, and ferment it naturally in sea salt brine to the perfection. Our special recipe conveys the original emerald color of the wholesome fruit, preserving its firm texture, and light, fruity flavor with a little tartness, and a bit peppery taste.
