Its generous shape and rosy colour makes this is a wonderful choice for full-flavoured presentations showcasing rice. Red Jasmine Rice is a medium grain rice that has an aromatic, popcorn-like or nutty aroma and flavour.  Thai Green Curry & Red Jasmine Rice Recipe Ingredients:  4 - 6 tbsp Thai Green Curry Paste (Maesri best)  2 large garlic cloves , minced 2 tsp fresh ginger , finely grated 1 tbsp lemongrass paste 2 tbsp vegetable oil 1 cup chicken or vegetable broth, with low sodium 400 g/14oz coconut milk  1  tsp fish sauce  1 tsp white sugar  6 kaffir lime leaves (in halves) 350 g/12 oz chicken thigh , skinless boneless, sliced  2 Japanese eggplants, , small, 1cm / 2/5" slices  1 1/2 cups snow peas , small, trimmed 16 Thai basil leaves Juice of 1/2 lime  Directions: Heat oil in a pot or skillet over medium/high heat. Add curry paste, garlic, ginger and lemongrass. Cook for 2 to 3 minutes.  Add chicken broth and coconut milk, mix in well until the paste is dissolved.  Curry in a jar seasonings: Add 1 tsp fish sauce, and 1 tsp sugar.  Add kaffir lime leaves.  Mix well and bring to simmer. Add chicken.  Lower heat to medium so that there is a gentle bubble. Cook for about 7 minutes. Add eggplants, and cook for 5 minutes until the eggplants are soft.  Add snow peas, and cook for 2 minutes.  Stir in basil and lime juice.  Serve curry over our delicious Oragnic Jasmine Red Rice with garnishes of your choosing.
