The hams are then stored at a warmer temperature and lower humidity to allow the cure mixture to equalize throughout the ham creating consistent color, odor and flavor. Next the temperature is set at a constant 90 degrees and the heat will give the ham a golden brown color. This entire process takes close to 100 days to complete and results in the ham weighing about 22% less with the rich full flavor.desired in Country Ham.
