Blackening creates quite a bit of smoke so it is best done outdoors or in an area with plenty of ventilation. Use on steaks, chicken, fish or shrimp. Dip the food in melted butter. Rub spices into the meat to season well. Use high heat and when skillet is very hot, put in the meat or seafood. Sear on one side for several minutes. Turn and cook the other side.
