The Bourbon Chiroso is a varietal that stands out among our specialty coffees as an exotic gem. Due to its morphology and sensory behavior, the Chiroso is considered a native Colombian Geisha, as they share complexities and certain aspects, both in plant form and grain, with exquisite aromas while also being a quite delicate coffee. It is a variety with floral notes, a complex aroma, a unique and distinctive cup profile, and experts agree that it behaves better when tasted cold, revealing sweet flavors of mandarin, citrus acidity, honey from bees, and hints of chamomile. These unique flavor nuances set it apart from other coffees, making the cup shine. Since its discovery in 2014, it has consistently ranked among the top positions in the Colombian National Coffee Excellence competition. Originating from the Antioquia department, it is harvested at an altitude of 1,900 meters above sea level on La Reserva farm. It undergoes a specialized process that involves open-tank fermentation for 96 hours before being washed. Subsequently, it undergoes a natural drying process on African beds, exposed to the sun and wind, ensuring a temperature below 113°F, thus achieving an optimal humidity level of 12%. Following this, it is carefully roasted just before being sealed in a double package that ensures the preservation of the quality and unique characteristics of this exceptional varietal.
