Italian Oregano is the milder oregano variety used for cooking Italian and Mexican food. Being a staple of Italian cuisine, this is a must for your herb garden. Italian Oregano is useful fresh or dried, and in fact unlike most herbs, it is more flavorful in its dried form. It is used for seasoning everything from salad dressings to pizza to spaghetti sauce to pickled olives. Italian Oregano is good in sauces, meats and fried vegetables. Place plants 20 inches apart in a full sun location. These herbs need a normal well-draining soil with adequate weekly watering. The plant will grow up to 18 inches tall, but you can harvest leaves before then. Clip leaves of the oregano once the plant is about 6 inches tall. Limit the harvest so at least six leaves are left on the plant to promote growth. Harvesting leaves from the plant promotes new leaf growth and causes the plant to form more branches and leaves, increasing the usefulness of the plant.
