CAVALLI Balsamic Vinegar_ 8_45 FZ

A new innovation, from the venerable Cavalli family of Italy, Soft & Fruity balsamico is the result of requests by customers for a less acetic and fruitier balsamic vinegar. Soft & Fruity uses a slightly different process than other Cavalli products. Made solely from cooked must of Trebbiano grapes, the sweet condiment is topped off in the middle of production with younger fermented cooked must, and further aged in small traditional wood barrels for an additional 15 months. This refilling (with young grape must) reduces the vinegar's acidity creating a dense, aromatic, plumy sweetness. Use this delightful, new vinegar whenever you desire a fruitier flavor. Delicious sprinkled on lamb, drizzled onto fresh berries, or whisked with oil for salad dressing.
