Since 1780, the Castillo de Canena estate has been producing exceptional oils in the Guadalquivir Valley of Andalusia in the south of Spain. This Biodynamic oil is made from Picual olives cultivated using biodynamic agriculture - a step forward from the ORGANIC farming method. This method is based on the harmonization between the different forces that govern nature: seasons, atmospheric phenomenons, lunar cycles and the position of the constellations in the cosmos. Biodynamic agricultura seeks a comprehensive balance of soil, trees, animals and humanity. Tasting notes: High intensity fruity green olive, olive leaf, tomato, and aromatic herbs including as mint and artichoke. Balsamic notes. Sensations of sweet fruits and berries. In mouth it has great personality, but is not aggressive. Bitter notes are moderate and well balanced with spicy notes. At the end a light astringency reminds us of artichoke. Very structured due to its high percentage of oleic acid. High persistence and harmony.
