FINGER LICKIN' MEMPHIS RUB: A celebration of traditional Memphis style with fresh, vibrant, powerful spices. It;s not really sweet or too salty since its focused on roasts but is very versatile. Memphis style is really centered around pork and even famous for pulled pork, but it's great on chicken too. really any pork rub should be great on chicken, especially fatty cuts like the legs and thighs. How Would You use It? BBQ Rub / BBQ Seasoning: To best use a rub the thicker the meat the thicker the coating should be. Pork chops should have a thin application but a butt rub application should be a strong coating. Time is your friend for the best penetration. if you have a thick roast let it soak in all day and a thin steak can be used pretty quick. Pork Tenderloin: Put a medium coating and cook normally but keep some rub. For a fun glaze mix equal parts apricot jam and mix some of the rub in to make a pepper jelly. Not hot enough? Add some cayenne or red peppers left over from a pizza packet for flavor. Pork Chop: Use a thin application. it has just enough sugar to aid in browning. Pork Butt: Just put a thick coating on and let it rest in the fridge for a day or so to fully penetrate. You can also put on yellow mustard before you cook. Most of the vinegar will cook away. Pork Butt: Its great as a general rub and for people who like dry BBQ. For a more developed glaze type bark put a couple cups of brown sugar on a rack of ribs after a good coating of the rub for terrific results. you won't really need a sauce. Chicken Wing / Chicken Seasoning : It's great in general on chicken, but is good for a pre-soak before breading for fried chicken and chicken wings. Pulled Chicken: Like above. But the rub can also be mixed in with some vinegar to make a Carolina style sauce or added to a boring sauce to perk it up.
