Santa Izabel is a microlot that caught our attention as the most unique and complex Brazilian coffee we have seen so far this year. It has a mineral rich volcanic profile that stimulates the entire palate, with excellent initial acidity and strong flavor retention in the back palate. It is a quintessential microlot of the Pocos de Caldas volcanic caldera region, an area with soil so rich the springs are considered healing waters. Most coffee enthusiasts will never have tasted a coffee with such a complete and rich profile. We have a limited supply, so this is a great coffee to date, but don't fall in love! This one has a ticket out of town. This is what Microlot coffee is all about, an extraordinary taste profile identified in a limited growing area. Our preferred roast level on this coffee is City or Medium. Despite its new-crop sweetness it is not too fruity at lower roast temperatures, and medium-temperature roasting will engage a wealth of flavor tones.
