This spice mix is hand-blended, mixing sweetspices such as cinnamon, cumin, coriander, cardamom, nutmeg and cloves, with fiercer spices such asblack peppercorns and paprika.Baharat, which has regional variations, is a North African spice mixused in Lebanon, Syria, Israel and Jordan and is often used to season lamb. However, it can also be an excellent all-purpose flavor enhancer for rich fish, poultry, beef, lentils,tomato sauces, carrot salad and soups.
