Cook the chicken using indirect cooking method. ? Always use a meat thermometer to check for doneness. Charcoal Grills / Smokers: ? Arrange coals so that juices from chicken do not drip into coals. ? Place a foil drip pan under chicken and place coals around drip pan. ? Make sure drip pan is large enough to cover the area below chicken. For safety, use long-handled tongs. Gas or Electric Grills / Smokers: ? Units with two or more burners: Turn one burner off after preheating. Place chicken over the unlit burner. ? Units with one burner: Set burner to lowest setting available. CAUTION: Use gloves or oven mitts when handling this product. Chicken, rack, beer or soda can be extremely HOT!
