Coarse grind 10lbs of lean meat, add seasonings, water and .4 oz of cure salt. Fine grind through 1/8th inch plate. Stuff in to 21mm edible casings (not included). Transfer to smokehouse and cook to 160f. Cold Shower, Chill Overnight and Package.
